The Bikini Cocktail

Serves 10 servings

To make the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Premix (makes 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Method

Making the Cordial: Combine every items into a saucepan, heat until it reaches a light boil, stirring so the sugar melts. Next, take off the heat allowing it to reach room temperature fully. Pour to a sterilised bottle, seal and store chilled, it will last for about a month.

For the Batch Mix: Combine the specified liquids in a big jug, let it rest for an hour, then filter it best through a fine cloth, to ensure it's fully clarified.

For serving: Measure 85ml of the premix into a cocktail shaker filled with ice, and stir carefully for a minute to cool it down. Strain into an frosted cocktail glass or equivalent, garnish with a few cranberries and finish using a brief mist of the essential oil above the glass.
